Arkansas Chicken Casserole

Arkansas Chicken Casserole

1 — Whole Fryer

1 — Stick Margarine

1 — Cup Chopped Celery

1 — Cup Chopped Onion

1 — Can Cream of Mushroom Soup

1 — Large Can Sliced Mushrooms

3 — Cups Cooked Brown Rice

1 — 8 0z. Jar Processed Cheese Food 

Salt to Taste
Party Crackers

Cook chicken until tender. Cool chicken, bone and cut into bite-size pieces. Cook onion and celery in butter till tender. Add cheese; stir until melted. Add mushrooms and chicken. Blend in mushroom soup, adding a little chicken broth if needed. Add cooked brown rice to sauce, folding in gently. Pour into large, greased casserole dish (9×15). Top with party cracker crumbs. Dot with butter. Bake 45 minutes at 300°
